This post is less about the meatball recipe and more about a fun way to serve them. But there is a yummy recipe here for you in case you don’t already have a favorite.
I saw these on Pinterest and thought they would be perfect at my house. I was right. My two year old kept asking for another “cutcake” and insisting that it was his birthday and my husband was just impressed that I made a meal that involved ingredients.
You can use your own meatball recipe or use what I tend to “throw together” but always ends up tasting delicious.
1 pound ground beef or turkey
1 large green pepper (finely chopped)
1/2 yellow onion (finely chopped)
1/2 cup bread crumbs ( I used herb pepperidge farm but any will work)
1 large egg
1 can diced tomatoes
1 Tablespoon parsley
Few tablespoons milk if it needs more moisture
Garlic powder, salt and pepper to taste
Mix all ingredients together in a bowl using your hands (preferably clean). Do not over-mix or mash up. Form balls with the mixture. For these cupcakes, I make them a little larger.
Optional: Brown meatballs in skillet before baking.
Line meatballs on greased cookie sheet or use greased muffin tin placing meatball in each section. Smoosh them down a little so they are somewhat flat.
Bake at 350 degrees F for about 20 minutes.
Place your meatball inside a cute cupcake liner and top with mashed potatoes.
To get this swirly look, scoop some mashed potatoes into a sandwich bag and snip the corner off with scissors. This makes a pastry bag effect and you can squeeze your potatoes onto the meatball with precision.
Sprinkle with dried parsley or basil and top with half of a cherry tomato.
These would be great for dinner party appetizers or for the main meal at home to turn dinner into a party!
